We were out and about and decided to stop for lunch. We went to costa vida. I had a salad this included light brown rice black beans lettuce pico a small amount of mango salsa and grilled chicken. I forwent any dressing cheese or additional topping.

Instructions

  • 1.

    1. Start by cooking the light brown rice according to package instructions (about 20 minutes).

    2. While the rice is cooking, grill the chicken breast until fully cooked (about 6-7 minutes per side). Let it rest before slicing.

    3. In a large bowl, combine the chopped romaine lettuce, black beans, corn, pico de gallo, and mango salsa.

    4. Once the rice is cooked, fluff it with a fork and add it to the salad mixture.

    5. Top the salad with sliced grilled chicken and sprinkle with fresh cilantro.
