“We were out and about and decided to stop for lunch. We went to costa vida. I had a salad this included light brown rice black beans lettuce pico a small amount of mango salsa and grilled chicken. I forwent any dressing cheese or additional topping.”

Instructions
1.
1. Start by cooking the light brown rice according to package instructions (about 20 minutes).

2. While the rice is cooking, grill the chicken breast until fully cooked (about 6-7 minutes per side). Let it rest before slicing.

3. In a large bowl, combine the chopped romaine lettuce, black beans, corn, pico de gallo, and mango salsa.

4. Once the rice is cooked, fluff it with a fork and add it to the salad mixture.

5. Top the salad with sliced grilled chicken and sprinkle with fresh cilantro.

6. Toss gently to combine all ingredients and serve immediately.
