Instructions
1.
1. Start by grilling the chicken breasts over medium heat for about 6-7 minutes on each side, or until fully cooked. Let them rest before slicing.

2. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.

3. Add the sliced grilled chicken on top of the salad.

4. Sprinkle the crumbled goat cheese over the salad.
5.
5. Drizzle with balsamic vinaigrette and season with salt and pepper to taste.

6. Toss gently to combine all ingredients and serve immediately.

2 cups mixed greens (spinach, arugula, and romaine)

2 grilled chicken breasts, sliced

1/2 cup goat cheese, crumbled

1/4 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

2 tablespoons balsamic vinaigrette (low sugar)
