Instructions
1.
Preheat your oven to 425°F (220°C) for the sweet potato fries.
2.
Cut the sweet potato into thin strips and place them on a baking sheet. Spray lightly with olive oil and season with salt and pepper. Bake for 20-25 minutes, flipping halfway through, until crispy.

While the fries are baking, grill the chicken breasts on medium heat for about 6-7 minutes on each side, or until fully cooked. Season with salt and pepper.
4.
Toast the whole wheat bread slices lightly on a skillet or toaster.
5.
Spread 1/2 tablespoon of low-fat mayonnaise on each slice of bread.
6.
Layer the grilled chicken and lettuce on two slices of bread, then top with the remaining slices.
7.
Serve the sandwich with sweet potato fries on the side.
