Im not sure how I did here but this was tonights dinner. Chicken skewer with peppers and onions salt and pepper. Asparagus with olive oil garlic salt black pepper and red pepper. Baby potatoes with a seasoning that came from Target so idk what it is tastes mostly like garlic and peppers.

Instructions

  • 1.

    In a bowl, combine olive oil, minced garlic, garlic powder, smoked paprika, salt, and black pepper. Add chicken cubes and marinate for at least 30 minutes.

  • 2.

    Preheat the grill to medium-high heat.

  • 3.

    Thread the marinated chicken, bell peppers, onion, and asparagus onto skewers, alternating ingredients.

  • 4.

    In a separate pot, boil the baby potatoes until tender, about 10-15 minutes. Drain and season with garlic powder, salt, and red pepper flakes.

  • 5.

    Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

  • 6.

    Serve the skewers with the seasoned baby potatoes on the side.

    1 lb boneless, skinless chicken breast, cut into cubes

    1 red bell pepper, cut into chunks

    1 green bell pepper, cut into chunks

    1 medium onion, cut into chunks

    1 cup asparagus, trimmed

  • 6.

    2 tbsp olive oil

  • 7.

    2 cloves garlic, minced

  • 8.

    1 tsp garlic powder

  • 9.

    1 tsp smoked paprika

  • 10.

    Salt and black pepper to taste

  • 11.

    1 lb baby potatoes, halved

  • 12.

    1 tsp red pepper flakes (optional)
