Instructions
1.
Preheat your grill or grill pan over medium heat (about 5 minutes).

Brush the eggplant slices with olive oil and season with salt and pepper.
3.
Grill the eggplant slices for about 4-5 minutes on each side until tender and grill marks appear.

In a large bowl, combine arugula, cherry tomatoes, and grilled eggplant.
5.
Drizzle with balsamic vinegar and toss gently to combine.
6.
Top with sliced mozzarella and garnish with fresh basil leaves before serving.
