Lean ground beef with American cheese sourdough toast salad with vinaigrette

Instructions

  • 1.

    In a skillet over medium heat, cook the lean ground beef until browned, about 7-10 minutes. Season with salt and pepper.

  • 2.

    While the beef is cooking, prepare the salad by combining mixed greens, sliced red bell pepper, julienned carrot, and sliced red onion in a large bowl.

  • 3.

    In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to create the vinaigrette. Drizzle over the salad and toss to combine.

  • 4.

    Once the beef is cooked, place a slice of American cheese on top and cover the skillet for 1-2 minutes until the cheese melts.

  • 5.

    Toast the sourdough bread slices in a toaster or on a skillet until golden brown.

  • 6.

    Serve the cheesy ground beef alongside the salad, topped with crumbled feta cheese.

    1 lb lean ground beef (90% lean or higher)

    4 slices American cheese (low-fat if preferred)

    4 slices whole grain sourdough bread

    4 cups mixed salad greens (lettuce, spinach, etc.)

    1 red bell pepper, sliced

    1 carrot, julienned

    1/2 red onion, thinly sliced

  • 8.

    1/2 cup feta cheese, crumbled

  • 9.

    2 tablespoons olive oil

  • 10.

    1 tablespoon balsamic vinegar

  • 11.

    Salt and pepper to taste
