Instructions
1.
In a large skillet, heat olive oil over medium heat (if using).

Add the lean ground beef to the skillet and cook until browned, about 5-7 minutes. Break it apart with a spatula as it cooks.

Season the beef with salt and pepper to taste.

Add the diced tomatoes and chopped spinach (if using) to the skillet. Cook for an additional 3-4 minutes until the tomatoes soften.
5.
In a bowl, whisk the eggs and pour them over the beef and vegetable mixture. Stir gently to combine.
6.
Cook for another 3-5 minutes, stirring occasionally, until the eggs are fully cooked.
7.
