Instructions
1.
In a large skillet, heat olive oil over medium heat. Add ground turkey and cook until browned, about 5-7 minutes.
2.
Stir in corn, cherry tomatoes, and season with salt and pepper. Cook for an additional 5 minutes until heated through.
3.
In a bowl, layer mixed greens, cauliflower rice, and brown rice.
4.
Top with the turkey mixture, diced avocado, and a dollop of Greek yogurt.
5.
Garnish with fresh cilantro and serve immediately.

1/4 cup fresh cilantro, chopped

4 cups mixed greens

1 tablespoon olive oil
