Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).
2.
Add ground turkey, cumin, chili powder, salt, and pepper. Cook until browned (about 5-7 minutes).
3.
Stir in black beans and chopped spinach. Cook until spinach is wilted (about 3-4 minutes).
4.
Warm the sprouted corn tortillas in a separate pan or microwave.
5.
Assemble by placing the turkey mixture on each tortilla and topping with crumbled goat cheese.

1/2 cup goat cheese, crumbled
