Instructions

Preheat your oven to 400°F (200°C).

Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, and season with salt and pepper. Place cut-side down on a baking sheet and roast for 30-40 minutes until tender.

In a large skillet, heat 1 tbsp of olive oil over medium heat. Add diced onion and garlic, sautéing until translucent (about 3-4 minutes).

Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned (about 5-7 minutes).

Stir in the diced tomatoes, spinach, Italian seasoning, salt, and pepper. Let simmer for 10 minutes, allowing the flavors to meld.

Once the spaghetti squash is cooked, use a fork to scrape out the strands and mix them with the turkey mixture. Serve warm.
