Instructions
1.
1. In a large bowl, combine the mixed lettuce, shredded cabbage, and shredded carrots.

2. Add the sunflower seeds and cherry tomatoes (if using) to the bowl.
3.
3. Layer the sliced ham on top of the salad mixture.
4.
4. Drizzle with balsamic vinegar and season with salt and pepper to taste.
5.
5. Toss gently to combine all ingredients and serve immediately.
Ingredients
1.
4 cups mixed lettuce (romaine, green leaf, etc.)

2 cups shredded cabbage (green and purple)
3.
1 cup shredded carrots
4.
1 cup sunflower seeds (unsalted)
5.
8 oz lean ham, sliced
6.
1 cup cherry tomatoes, halved (optional)
7.
1/4 cup balsamic vinegar (or dressing of choice, low in sugar)
8.
Salt and pepper to taste
