So this might not count and I understand if it doesnt...but we went out to eat for my husbands birthday today and I got the salad bar. The only protein option they had was ham so I had that as well as lettuce baby corn cherry tomatoes olives a little cheese a lot of ranch and some red onion. Although Im not sure if this could be considered protein rich I enjoyed it and felt satisfied after eating it.

As this means your goal for the week is done we will indeed count it Allyson! Even if ham isnt the leanest protein its a good choice when the options are limited. Congrats on keeping consistent with your lunch choices! Lets keep this up for next week as well.

Instructions

  • 1.

In a large bowl, combine the mixed salad greens, diced ham, baby corn, cherry tomatoes, black olives, red onion, and shredded cheese.

  • 2.

Drizzle the light ranch dressing over the salad and toss gently to combine all ingredients evenly.

Serve immediately or refrigerate for up to 30 minutes to allow flavors to meld.
