Youve successfully hit your weekly target of 5 high fiber and protein rich lunches. Your choice of zucchini veggie spirals is a great way to incorporate fiber-rich foods into your meal. Keep it up!

Instructions

  • 1.

    1. Start by spiralizing the zucchinis into veggie noodles. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips.

  • 2.

    2. In a skillet, heat the olive oil over medium heat. Add the zucchini noodles and sauté for about 3-5 minutes until slightly tender. Season with black pepper.

  • 3.

    3. While the zucchini is cooking, prepare the sandwich. Place two slices of ham on each whole grain bun.

  • 4.

    4. Once the zucchini is ready, layer it on top of the ham in the sandwich.

  • 5.

    5. Optionally, add fresh spinach or mixed greens for extra fiber and nutrients.

  • 6.

    6. Serve immediately and enjoy your healthy ham sandwich!
