Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.

  • 3.

    While the sweet potatoes are roasting, cook the quinoa or farro according to package instructions.

  • 4.

    In a large bowl, combine the mixed greens, cooked quinoa or farro, roasted sweet potatoes, nuts, dried cranberries, and feta cheese.

  • 5.

    In a small bowl, whisk together the remaining olive oil and balsamic vinegar. Drizzle over the salad and toss gently to combine.

  • 6.

    Serve immediately or refrigerate for up to 2 hours before serving.
