What a delicious lunch! The toasted sesame seeds sound like a great addition

Instructions

  • 1.

In a bowl, mix soy sauce, honey, minced garlic, and grated ginger to create the marinade.

  • 2.

Cut the chicken breast into bite-sized pieces and marinate for at least 10 minutes.

  • 3.

Heat olive oil in a large skillet over medium heat. Add the marinated chicken and cook for about 5-7 minutes until browned and cooked through.

  • 4.

In the same skillet, add diced carrots and peas. Stir-fry for another 5 minutes until the vegetables are tender.

  • 5.

Serve the chicken over a bed of basmati rice, topped with the stir-fried vegetables.

  • 6.

Garnish with chopped green onions and toasted sesame seeds before serving.
