Dinner last night was a kale and cabbage mix salad with 2 tsp dressing. On the side was an omelette with 2 eggs and some extra egg whites and 1 oz of cheese.

Instructions

  • 1.

    In a large bowl, combine the chopped kale, shredded cabbage, carrots, red bell pepper, and green onions.

  • 2.

    Drizzle with olive oil or dressing, and season with salt and pepper. Toss well to combine.

  • 3.

    In a non-stick skillet, whisk together the egg whites and whole eggs. Cook over medium heat until set, about 5 minutes.

  • 4.

    Sprinkle cheese on one half of the omelette, fold it over, and cook for another minute until the cheese melts.

  • 5.

    Serve the salad alongside the omelette for a complete meal.

    1/2 cup red bell pepper, diced
