Instructions
1.
In a large bowl, combine the chopped kale, shredded cabbage, carrots, red bell pepper, and green onions.
2.
Drizzle with olive oil or dressing, and season with salt and pepper. Toss well to combine.
3.
In a non-stick skillet, whisk together the egg whites and whole eggs. Cook over medium heat until set, about 5 minutes.
4.
Sprinkle cheese on one half of the omelette, fold it over, and cook for another minute until the cheese melts.
5.
Serve the salad alongside the omelette for a complete meal.
