Used a prepackaged miso crunch salad from TJs (cut down the dressing a little) and added shrimp. Also had two hard boiled eggs as another snack

Youve hit your target of four dinners and lunches this week and thats fantastic good for you Great call on cutting back on the dressing (high in sugars and fats) and adding the shrimp for the source of protein. Keep making these healthy choices you are on the right track.

Instructions

  • 1.

    In a large bowl, combine the prepackaged miso crunch salad with the chopped kale, shredded cabbage, and shredded carrots. (2 minutes)

  • 2.

    Add the cooked shrimp on top of the salad mixture. (1 minute)

  • 3.

    Slice the hard-boiled eggs and arrange them on top of the salad. (2 minutes)

  • 4.

    Sprinkle sesame seeds and crunchy noodles (if using) over the salad. (1 minute)

  • 5.

    Drizzle the reduced miso dressing over the salad and toss gently to combine. (2 minutes)

  • 6.

    Serve immediately and enjoy your healthy meal!

    1 cup carrots (shredded)

    1 tablespoon sesame seeds

  • 8.

    1/4 cup crunchy noodles (optional)

    Reduced miso dressing (to taste)
