Instructions
1.
Cook the gluten-free pasta according to package instructions. Drain and set aside.
2.
In a large bowl, combine ground turkey, chopped kale, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
3.
Form the mixture into meatballs, about 1 inch in diameter.
4.
In a large skillet, heat a little olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 10-12 minutes.
5.
Pour the marinara sauce over the meatballs and simmer for an additional 10 minutes until cooked through.
6.
Serve the meatballs over the cooked pasta and garnish with Parmesan cheese if desired.
