Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Peel and dice the sweet potatoes, then toss them with a little olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes until tender and slightly caramelized.

  • 3.

    While the sweet potatoes are roasting, cook the wild rice according to package instructions.

  • 4.

    In a large bowl, combine the chopped kale, cooked wild rice, roasted sweet potatoes, diced apple, goat cheese, and chopped almonds.

  • 5.

    In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper. Drizzle this dressing over the salad and toss gently to combine.

  • 6.

    Serve immediately or let it chill in the fridge for 15-20 minutes to allow the flavors to meld.

    1 apple, diced (preferably a crisp variety like Fuji or Honeycrisp)

    1/2 cup goat cheese, crumbled

    1/2 cup almonds, chopped

  • 7.

    1 tablespoon olive oil

  • 8.

    1 tablespoon apple cider vinegar

  • 9.

    Salt and pepper to taste
