Instructions
1.
In a large bowl, combine the mixed greens, cherry tomatoes, kidney beans, and walnuts.
2.
Crumble the leftover hamburger patty (or cooked lean ground turkey/chicken) into the salad.
3.
In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
4.
Drizzle the dressing over the salad and toss gently to combine.
5.
Top with crumbled blue cheese and serve immediately.

2 cups mixed greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved
3.
1 can (15 oz) kidney beans, rinsed and drained
4.
1/2 cup walnuts, chopped
5.
1/4 cup blue cheese, crumbled
6.
1 leftover hamburger patty, crumbled (or 1 cup cooked lean ground turkey/chicken)
7.
2 tablespoons olive oil
8.
1 tablespoon balsamic vinegar
9.
Salt and pepper to taste
