Instructions

    1. Preheat your grill or skillet over medium-high heat (about 5 minutes).

    2. Season the pork loin with salt and pepper on both sides.

    3. Grill or sear the pork for about 6-7 minutes on each side, or until the internal temperature reaches 145°F (63°C).

    4. While the pork is cooking, steam or sauté the mixed vegetables in a separate pan for about 5-7 minutes until tender.

    5. In a bowl, combine the salad greens, olive oil, vinegar, and mustard. Toss well to coat.
