Lettuce wrapped burger with carrot fries

Excellent choice Gertrud! I absolutely love the fries! Loads of fiber with some nice protein as well. Thanks for the update lets keep this up!

Instructions

  • 1.

    1. Preheat a skillet over medium heat and spray with olive oil.

  • 2.

    2. In a bowl, season the ground beef with salt and pepper, then form into 4 patties.

  • 3.

    3. Cook the patties in the skillet for about 4-5 minutes on each side, or until they reach your desired doneness.

  • 4.

    4. While the burgers are cooking, prepare the carrot fries by cutting carrots into thin strips and tossing them with a little olive oil, salt, and pepper.

  • 5.

    5. Spread the carrot fries on a baking sheet and roast in the oven at 425°F (220°C) for about 20 minutes, flipping halfway through.

  • 6.

    6. Assemble the burgers by placing a patty on a lettuce leaf, topping with cheese, tomatoes, onions, ketchup, and mustard.

  • 7.

    7. Serve with the carrot fries on the side.

    1 lb lean ground beef (90% lean or higher)

    1 head of romaine or iceberg lettuce, leaves separated

  • 3.

    1 cup shredded carrots

  • 4.

    1 cup sliced tomatoes

  • 5.

    1/2 cup sliced onions

  • 6.

    1/2 cup low-fat cheese (optional)

  • 7.

    1/4 cup ketchup (no added sugar)

  • 8.

    2 tbsp mustard

  • 9.

    Salt and pepper to taste

  • 10.

    Olive oil spray (for cooking)
