Instructions

Preheat your oven according to the instructions for the cauliflower crust pizza (usually around 425°F or 220°C).

While the oven is heating, prepare the Mediterranean salad. In a large bowl, combine chickpeas, cucumber, red onion, yellow bell pepper, zucchini, and spinach if using.

In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper. Pour this dressing over the salad and toss to combine.

Once the oven is ready, place the frozen cauliflower crust pizza on a baking sheet and bake according to package instructions (usually about 10-15 minutes).

After the pizza has baked for about 10 minutes, remove it from the oven and top with sliced chicken breast and crumbled feta cheese. Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and bubbly.

Serve the pizza hot alongside the Mediterranean salad for a balanced meal.
