I had some errands to run before work this morning so I picked up lunch from the grocery store. A Mediterranean salad and a little snack pack of turkey almonds and cheddar for some additional protein

Instructions

  • 1.

    In a large bowl, combine the spinach, cucumber, red bell pepper, black olives, and feta cheese.

  • 2.

    In a separate small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.

  • 3.

    Pour the dressing over the salad and toss gently to combine.

  • 4.

    Add the diced turkey breast on top and serve immediately.
