Instructions
1.
In a large pot, combine 2 cups of water and bring to a boil.

Add chopped onion, red bell pepper, and celery. Sauté for about 5 minutes until softened.
3.
Stir in cherry tomatoes, tomato sauce, and diced plum tomatoes. Add red pepper flakes and basil.
4.
Simmer for 15 minutes, allowing the flavors to meld.
5.
Add cannellini beans and steamed mussels. Cook for an additional 5-10 minutes until heated through.
6.
Serve hot, garnished with extra basil if desired.
