I took out from the freezer a Peanut Butter Oat Cake topped it with 1 TBS yogurt and added a half peach. Calories 329 Protein 16g Fiber 7g. It was good. Now Im making a cauliflower/farro dish for dinner tonight and to freeze for future dinners.

Delicious treat! The fiber from the oats and the protein from the yogurt are a great combination to keep you feeling satisfied. Instructions

  • 1.

    Preheat your oven to 350°F (175°C).

  • 2.

    In a large bowl, mix the rolled oats, baking powder, cinnamon, and salt.

  • 3.

    In another bowl, combine the applesauce, peanut butter, honey (if using), and almond milk until smooth.

  • 4.

    Pour the wet ingredients into the dry ingredients and mix until well combined.

  • 5.

    Fold in the chopped nuts if using.

  • 6.

    Pour the mixture into a greased baking dish and spread evenly.

  • 7.

    Bake for 25 minutes or until golden brown and a toothpick comes out clean.

  • 8.

    Let it cool for a few minutes before slicing.

  • 9.

    Serve warm, topped with Greek yogurt and sliced peach.

    1/4 tsp salt

  • 11.

    1/4 cup chopped nuts (optional, for added protein and crunch)
