“I took out from the freezer a Peanut Butter Oat Cake topped it with 1 TBS yogurt and added a half peach. Calories 329 Protein 16g Fiber 7g. It was good. Now Im making a cauliflower/farro dish for dinner tonight and to freeze for future dinners.”

Instructions
1.
Preheat your oven to 350°F (175°C).
2.
In a large bowl, mix the rolled oats, baking powder, cinnamon, and salt.
3.
In another bowl, combine the applesauce, peanut butter, honey (if using), and almond milk until smooth.
4.
Pour the wet ingredients into the dry ingredients and mix until well combined.
5.
Fold in the chopped nuts if using.
6.
Pour the mixture into a greased baking dish and spread evenly.
7.
Bake for 25 minutes or until golden brown and a toothpick comes out clean.
8.
Let it cool for a few minutes before slicing.
9.
Serve warm, topped with Greek yogurt and sliced peach.

1/2 cup almond milk (or any low-calorie milk)

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

1/4 cup chopped nuts (optional, for added protein and crunch)
