Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).

Add the sliced sausage and cook until browned, about 5-7 minutes.
3.
Add the zucchini slices to the skillet and sauté for another 5 minutes until tender.
4.
In a separate bowl, whisk the eggs with salt and pepper.

Push the sausage and zucchini to one side of the skillet and pour the eggs into the other side.
6.
Scramble the eggs until fully cooked, about 3-4 minutes.
7.
Mix everything together in the skillet and serve hot, garnished with fresh herbs if desired.
