Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Season the pork chops with salt and pepper on both sides.

  • 3.

    Heat a skillet over medium-high heat and add olive oil.

  • 4.

    Sear the pork chops for 3-4 minutes on each side until browned.

  • 5.

    Transfer the skillet to the preheated oven and bake for 10-12 minutes until cooked through.

  • 6.

    While the pork is cooking, prepare the salad by combining romaine, cucumbers, green peppers, red onion, craisins, and sunflower seeds in a large bowl.

  • 7.

    In a small bowl, whisk together olive oil and apple cider vinegar, then drizzle over the salad and toss to combine.

  • 8.

    Once the pork chops are done, let them rest for a few minutes before slicing.

  • 9.

    Serve the sliced pork chops over the salad and enjoy!

    1 oz sunflower seeds

  • 8.

    1 tbsp olive oil

    1 tbsp apple cider vinegar

  • 10.

    Salt and pepper to taste

  • 11.

    1 cup cooked quinoa (optional for added fiber)
