Instructions
1.
Preheat your oven to 400°F (200°C).
2.
Season the pork chops with salt, pepper, garlic powder, and onion powder.
3.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the pork chops for 3-4 minutes on each side until browned.
4.
Remove the pork chops and set aside. In the same skillet, add the sauerkraut and stir to combine with the drippings.
5.
Place the pork chops on top of the sauerkraut, cover the skillet, and transfer to the oven. Bake for 20-25 minutes until the pork is cooked through.
6.
While the pork is baking, boil the potatoes in salted water until tender, about 15 minutes. Drain and mash with a little salt and pepper.
7.
Meanwhile, place the butternut squash halves on a baking sheet, season with salt and pepper, and roast in the oven for 20 minutes until tender.
8.
Serve the pork chops over the sauerkraut with a side of mashed potatoes and roasted squash. Garnish with fresh parsley.

1 cup butternut squash, halved and seeded

1 tablespoon olive oil

1 teaspoon onion powder
9.
Fresh parsley for garnish
