“2 cups water 5 slices roasted pork tenderloin 1 cup roasted carrots dressed with 1 tsp coconut milk and chopped mint. Mixed green lettuce w/ 1/2 sliced avacado 1/2 sliced orange 2 small sliced beets and dressed with olive oil and champagne vinegar and 1 tbsp crumbled feta.”

Instructions
1.
Preheat your oven to 400°F (200°C).

Season the pork tenderloin with salt, pepper, and your choice of herbs. Roast in the oven for 25-30 minutes until cooked through.

While the pork is roasting, peel and slice the carrots. Toss them with a little olive oil, salt, and pepper, and roast alongside the pork for the last 20 minutes.
4.
In a bowl, combine mixed greens, sliced avocado, orange, beets, and feta. Drizzle with olive oil and champagne vinegar.
5.
Once the pork is done, let it rest for 5 minutes before slicing.
6.
Serve the sliced pork with roasted carrots and the salad on the side, garnished with chopped mint.
