Instructions
1.
Preheat your oven to 400°F (200°C).

In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes.

While the sweet potatoes are roasting, season the pork chops with salt, pepper, and any additional spices you prefer.

In a skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the pork chops and cook for about 4-5 minutes on each side until browned and cooked through.

In the last 5 minutes of cooking, add the sliced onions, kale, and red cabbage to the skillet, stirring until the vegetables are wilted.
6.
Once everything is cooked, serve the pork chops on a plate with the roasted sweet potatoes and top with crumbled feta cheese.
