Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a large bowl, combine the diced sweet potato, Brussels sprouts, zucchini, carrots, and mushrooms. Drizzle with olive oil, and season with garlic powder, paprika, salt, and pepper. Toss to coat evenly.
3.
Place the seasoned vegetables on a baking sheet lined with parchment paper.
4.
Season the pork chops with salt, pepper, and any additional spices you prefer.
5.
Nestle the pork chops among the vegetables on the baking sheet.
6.
Bake in the preheated oven for 25-30 minutes, or until the pork is cooked through (internal temperature of 145°F/63°C) and the vegetables are tender.
7.
If using spinach, add it to the baking sheet during the last 5 minutes of cooking to wilt it slightly.
8.
Remove from the oven, let rest for a few minutes, then serve warm.
