Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a bowl, toss the broccoli and cauliflower florets with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes, or until tender and slightly browned.

  • 3.

    While the vegetables are roasting, season the pork chops with salt, pepper, and cinnamon.

  • 4.

    Heat a non-stick skillet over medium-high heat. Add the pork chops and cook for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C).

  • 5.

    In the last few minutes of cooking, add the diced apples and apple cider vinegar to the skillet. Cook until the apples are tender, about 3-4 minutes.

  • 6.

    Serve the pork chops topped with the apple mixture alongside the roasted vegetables.
