Dinner also looks delicious loved seeing so much green in it. I can tell adding green leafy vegetables is becoming easier for you well done.

Instructions

  • 1.

    1. Preheat your oven to 400°F (200°C).

  • 2.

    2. Season the pork chops with salt, pepper, garlic powder, and paprika.

  • 3.

    3. Heat olive oil in a skillet over medium-high heat. Sear the pork chops for 3-4 minutes on each side until browned.

  • 4.

    4. Transfer the pork chops to a baking dish and bake in the oven for 15-20 minutes until cooked through.

  • 5.

    5. While the pork is baking, boil the sweet potatoes in a pot of water for about 15 minutes until tender. Drain and mash lightly with a fork.

  • 6.

    6. In a separate pan, sauté the collard greens in a little olive oil until wilted, about 5-7 minutes.

  • 7.

    7. Prepare the salad by combining mixed greens, cucumber, and red bell pepper in a bowl.

  • 8.

    8. Serve the pork chops alongside the mashed sweet potatoes, sautéed collard greens, and fresh salad.
