Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).

Add sliced onions and cook until translucent (about 5 minutes).

Stir in mushrooms and cook until softened (about 5 minutes).

Add the sliced pork loin, garlic powder, salt, and pepper. Cook until the pork is browned (about 5-7 minutes).

Pour in the chicken broth and let simmer for 5 minutes until the pork is cooked through.
6.
Serve the pork mixture alongside roasted cauliflower, garnished with fresh parsley.
