Leftovers collide! The remainder of my pork loin mushrooms and onions I had for lunch earlier this week and the rest of the roasted cauliflower from dinner.

Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

    Add sliced onions and cook until translucent (about 5 minutes).

  • 3.

    Stir in mushrooms and cook until softened (about 5 minutes).

  • 4.

    Add the sliced pork loin, garlic powder, salt, and pepper. Cook until the pork is browned (about 5-7 minutes).

  • 5.

    Pour in the chicken broth and let simmer for 5 minutes until the pork is cooked through.

  • 6.

    Serve the pork mixture alongside roasted cauliflower, garnished with fresh parsley.
