Instructions
1.
1. In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and water is absorbed.

2. While the quinoa is cooking, prepare the vegetables. Shred the carrots and red cabbage, and dice the apple.

3. In a large bowl, combine the cooked quinoa, shredded carrots, red cabbage, diced apple, and chickpeas.

4. In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper. Pour the dressing over the salad and toss to combine.

5. Garnish with chopped parsley if desired, and serve warm or chilled.
