Your meal of roasted chicken with a generous serving of cauliflower carrots and lightly sauted arugula looks scrumptious! The lean protein from the chicken and the fiber-rich veggies are a fantastic combination to keep you satiated. The arugula adds a nice touch of greens to your plate and its great to see you incorporating such a variety of vegetables.

Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, toss the cauliflower and carrots with olive oil, garlic powder, onion powder, salt, and pepper.

  • 3.

    Spread the vegetables on a baking sheet and roast for 20 minutes.

  • 4.

    While the vegetables are roasting, season the chicken thighs with salt, pepper, and dill.

  • 5.

    After 20 minutes, add the chicken thighs to the baking sheet with the vegetables.

  • 6.

    Continue roasting for an additional 20 minutes, or until the chicken is cooked through and the vegetables are tender.

  • 7.

    In a large serving bowl, place the arugula and top with the roasted chicken and vegetables. Serve warm.
