Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a large bowl, toss the cauliflower and carrots with olive oil, garlic powder, onion powder, salt, and pepper.
3.
Spread the vegetables on a baking sheet and roast for 20 minutes.
4.
While the vegetables are roasting, season the chicken thighs with salt, pepper, and dill.
5.
After 20 minutes, add the chicken thighs to the baking sheet with the vegetables.
6.
Continue roasting for an additional 20 minutes, or until the chicken is cooked through and the vegetables are tender.
7.
In a large serving bowl, place the arugula and top with the roasted chicken and vegetables. Serve warm.
