Lettuce arugula lentils brown rice & quinoa mixture salsa rotisserie chicken. Its pretty! Feels a little odd mixing rice and leafy greens but will adjust.

Instructions

  • 1.

    In a large bowl, combine the arugula, lentils, brown rice, and quinoa. (5 minutes)

  • 2.

    Add the shredded rotisserie chicken on top. (2 minutes)

  • 3.

    Pour the salsa over the mixture and gently toss to combine. (3 minutes)

  • 4.

    Season with salt, pepper, and olive oil if desired. (2 minutes)

  • 5.

    Serve immediately or refrigerate for later. (3 minutes)
