Instructions
1.
In a large bowl, combine the arugula, lentils, brown rice, and quinoa. (5 minutes)
2.
Add the shredded rotisserie chicken on top. (2 minutes)
3.
Pour the salsa over the mixture and gently toss to combine. (3 minutes)
4.
Season with salt, pepper, and olive oil if desired. (2 minutes)
5.
Serve immediately or refrigerate for later. (3 minutes)
