Instructions
1.
1. Preheat your grill or skillet over medium heat. Season the salmon fillets with salt and pepper.

2. Cook the salmon for about 4-5 minutes on each side, or until cooked through and flaky. Remove from heat and let it rest.

3. In a bowl, mix the Greek yogurt, lemon juice, Dijon mustard, minced garlic, salt, and pepper to create a creamy dressing.

4. In a large salad bowl, combine the chopped romaine lettuce and sliced hard-boiled eggs.

5. Flake the cooked salmon and add it to the salad. Drizzle the dressing over the top and toss gently to combine.

6. Serve immediately, garnished with optional Parmesan cheese if desired.

4 oz salmon fillets (skinless)

4 cups romaine lettuce, chopped

2 hard-boiled eggs, sliced

1/2 cup plain Greek yogurt (as a healthier Caesar dressing alternative)

1 tbsp lemon juice

1 clove garlic, minced

Salt and pepper to taste

Optional: 1/4 cup grated Parmesan cheese (use sparingly)
