Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a large bowl, toss the diced purple potatoes with 1 tablespoon of olive oil, salt, pepper, garlic powder, and paprika. Spread them on a baking sheet.
3.
Bake the potatoes for 15 minutes.
4.
While the potatoes are baking, season the salmon fillets with salt, pepper, and the remaining olive oil.
5.
After 15 minutes, remove the baking sheet from the oven and add the bell peppers and bok choy around the potatoes.
6.
Place the salmon fillets on top of the vegetables and return the baking sheet to the oven.
7.
Bake for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
8.
Serve with lime wedges for a fresh burst of flavor.

4 salmon fillets (about 4-6 oz each)

2 cups bok choy, chopped
3.
1 red bell pepper, sliced
4.
1 yellow bell pepper, sliced
5.
2 cups purple potatoes, diced
6.
2 tablespoons olive oil
7.
2 limes, cut into wedges
8.
Salt and pepper to taste
9.
1 teaspoon garlic powder
10.
1 teaspoon paprika
