I made a spinach hard boiled egg quinoa & plant based chicken salad. I used lemon for my dressing.

Instructions

  • 1.

    In a large bowl, combine the fresh spinach and cooked quinoa.

    Add the diced plant-based chicken and chopped hard-boiled eggs to the bowl.

  • 3.

    In a small bowl, whisk together the lemon juice, olive oil, and black pepper.

  • 4.

    Pour the dressing over the salad and toss gently to combine all ingredients.

  • 5.

    Serve immediately or refrigerate for up to an hour before serving for a chilled salad.
