Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, combine ground turkey, breadcrumbs, egg, honey, sriracha, and half of the green onions. Season with salt and pepper. Mix until well combined.

  • 3.

    Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

  • 4.

    In a separate bowl, toss the sliced zucchini, red bell pepper, mushrooms, and yellow squash with olive oil, salt, and pepper.

  • 5.

    Spread the vegetables around the meatballs on the baking sheet.

  • 6.

    Bake for 20-25 minutes, or until the meatballs are cooked through and the vegetables are tender.

  • 7.

    Serve hot, garnished with the remaining green onions.

    1 cup mushrooms (sliced)

  • 10.

    1 yellow squash (sliced)

  • 11.

    1 tbsp olive oil

  • 12.

    Salt and pepper to taste
