Instructions
1.
Preheat your oven to 400°F (200°C).

Drizzle the butternut squash halves with olive oil and season with salt and pepper. Place them cut-side down on a baking sheet and roast for 25-30 minutes until tender.

In a skillet over medium heat, add the pork sausage and cook until browned, breaking it apart with a spatula (about 5-7 minutes).

Add the diced onion, celery, and thyme to the skillet. Cook until the vegetables are softened (about 5 minutes).

Stir in the chopped spinach, dried cranberries, and pecans. Cook for an additional 2-3 minutes until the spinach wilts.

Once the butternut squash is done roasting, carefully flip them cut-side up. Fill each half with the sausage and vegetable mixture.
7.
Return the stuffed squash to the oven and bake for an additional 10-15 minutes until heated through.

1/2 cup pecans, chopped

1 teaspoon olive oil

Salt and pepper to taste
10.
1 teaspoon dried thyme (optional)
