I had this salad its what I call enchilada salad. Its mainly Romain lettuce in arugula which I really enjoy. I also add half a small tomato some cucumber and some bell pepper. I then take two ground turkey enchiladas and put it on the salad I top it was a half a serving of cheese and a dollop of reduced calorie sour cream. It totaled 450 cal. I really enjoy the salad but Im going to prepare a much smaller portion next time as it was too much. I enjoyed the meal what I ate was filling and it made me feel like I was having a lean meal.

Looks amazing super colorful The ground turkey enchiladas are a great source of lean protein and the Romain lettuce arugula tomato cucumber and bell pepper provide a good dose of fiber.

Instructions

  • 1.

    In a skillet over medium heat, cook the ground turkey until browned, about 7-10 minutes. Drain any excess fat.

  • 2.

    Add taco seasoning to the turkey and stir well. Cook for an additional 2-3 minutes until the seasoning is well incorporated.

  • 3.

    In a large bowl, combine the chopped Romaine lettuce and arugula.

  • 4.

    Top the greens with diced tomato, cucumber, bell pepper, and cooked turkey.

  • 5.

    Sprinkle shredded cheese and green onions over the top.

  • 6.

    Add a dollop of reduced-calorie sour cream and sprinkle tortilla strips for crunch.

  • 7.

    Serve immediately and enjoy your healthy taco salad!
