Instructions
1.
Preheat your oven to 400°F (200°C).

In a large bowl, toss the diced sweet potatoes with half of the olive oil, salt, pepper, and garlic powder. Spread them on a baking sheet.

Bake the sweet potatoes for 15 minutes.

While the sweet potatoes are baking, season the tilapia fillets with paprika, salt, and pepper.

After 15 minutes, add the tilapia fillets and sliced zucchinis to the baking sheet with the sweet potatoes.
6.
Drizzle the remaining olive oil over the zucchinis and season with salt and pepper.
7.
Return the baking sheet to the oven and bake for an additional 15 minutes, or until the fish is cooked through and the vegetables are tender.
8.
In a non-stick skillet, scramble the egg whites over medium heat until fully cooked.
9.
Serve the tilapia and veggies alongside the scrambled egg whites, garnished with fresh herbs.
