Instructions
1.
Preheat your air fryer to 375°F (190°C).

In a bowl, toss the cubed tofu with soy sauce, garlic powder, ginger powder, salt, and pepper. Let it marinate for about 10 minutes.

Place the marinated tofu in the air fryer basket and cook for 15 minutes, shaking halfway through for even cooking.

While the tofu is cooking, heat olive oil in a large skillet over medium heat.

Add the sliced onion and cook until translucent, about 3-4 minutes.
6.
Add the broccoli and carrots to the skillet, stirring occasionally, and cook for another 5-7 minutes until tender.
7.
Once the tofu is done, add it to the skillet with the vegetables and stir to combine.
8.
Serve the stir-fry over cooked jasmine rice.

2 cups broccoli florets

1 cup carrots, sliced

1 medium onion, sliced

2 tablespoons low-sodium soy sauce

1 tablespoon olive oil

1 teaspoon ginger powder
9.
Salt and pepper to taste
10.
2 cups cooked jasmine rice
