Instructions
1.
1. Preheat a skillet over medium heat and lightly spray with olive oil if desired.

2. Cook the turkey bacon until crispy, about 5-7 minutes, flipping halfway through.

3. While the bacon cooks, toast the multigrain bread until golden brown.

4. Spread the mashed avocado evenly on each slice of toasted bread.

5. Layer the cooked turkey bacon, sliced tomato, and arugula on top of the avocado.

6. Season with salt and pepper to taste, then top with another slice of bread.
7.
7. Cut the sandwich in half and serve with a side of asparagus home fries.
