BLT with turkey bacon turkey avocado hummus and a good handful of arugula on multigrain toast! Served with a side of asparagus home fries.

Instructions

  • 1.

    1. Preheat a skillet over medium heat and lightly spray with olive oil if desired.

  • 2.

    2. Cook the turkey bacon until crispy, about 5-7 minutes, flipping halfway through.

  • 3.

    3. While the bacon cooks, toast the multigrain bread until golden brown.

  • 4.

    4. Spread the mashed avocado evenly on each slice of toasted bread.

  • 5.

    5. Layer the cooked turkey bacon, sliced tomato, and arugula on top of the avocado.

  • 6.

    6. Season with salt and pepper to taste, then top with another slice of bread.

  • 7.

    7. Cut the sandwich in half and serve with a side of asparagus home fries.
