Instructions
1.
1. Start by mashing the ripe avocado in a bowl. Add a squeeze of lemon juice, salt, and pepper to taste.

2. Spread a thin layer of Greek yogurt on one side of each slice of oatmeal bread.
3.
3. Layer the sliced turkey evenly on four slices of bread.
4.
4. Add a generous amount of the mashed avocado on top of the turkey.
5.
5. Pile on the fresh arugula for added crunch and nutrition.
6.
6. Top with the remaining slices of bread, yogurt side down, and press gently.
7.
7. Cut the sandwiches in half and serve immediately, or wrap them for later.

8 slices of whole grain oatmeal bread

8 oz sliced turkey breast (preferably lean and low sodium)

1 ripe avocado
4.
2 tablespoons plain Greek yogurt (as a healthier mayo alternative)
5.
4 cups fresh arugula

7.
Lemon juice (optional, for flavor)
