Instructions
1.
Heat olive oil in a large pot over medium heat (about 2 minutes).
2.
Add chopped onion and bell pepper, sauté until softened (about 5 minutes).
3.
Stir in minced garlic and cook for another minute.
4.
Add ground turkey, breaking it apart with a spoon, and cook until browned (about 7-10 minutes).

Stir in chili powder, cumin, salt, and pepper, cooking for 1-2 minutes to release flavors.
6.
Add diced tomatoes, black beans, kidney beans, and spinach. Stir well.
7.
Bring to a simmer, cover, and cook for 15-20 minutes, stirring occasionally.

4.
1 can (28 oz) diced tomatoes (no added sugar)
5.
1 medium onion, chopped

2 cloves garlic, minced
7.
1 bell pepper, chopped
8.
2 cups spinach, chopped
9.
2 tablespoons chili powder
10.
1 teaspoon cumin
11.
Salt and pepper to taste

1 tablespoon olive oil
