Instructions
1.
In a large pot, heat a splash of water or low-sodium broth over medium heat. Add the chopped onion and bell peppers, sautéing for about 5 minutes until softened.

Add minced garlic and cook for an additional minute until fragrant.

Add the ground turkey to the pot, breaking it up with a spoon. Cook until browned, about 5-7 minutes.

Stir in the black beans, diced tomatoes, green chiles, chili powder, cumin, paprika, salt, and pepper. Mix well.

Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for 20 minutes, stirring occasionally.
6.
Taste and adjust seasoning if necessary. Serve hot, topped with shredded cheese and fresh cilantro if desired.

1 can (15 oz) black beans, rinsed and drained

1 can (14.5 oz) diced tomatoes (no added sugar)
4.
1 can (4 oz) diced green chiles
5.
1 cup bell peppers, chopped (any color)
6.
1 medium onion, chopped
7.
2 cloves garlic, minced
8.
1 tablespoon chili powder
9.
1 teaspoon cumin
10.
1 teaspoon paprika
11.
Salt and pepper to taste
12.
1/2 cup low-fat shredded cheese (optional)
13.
Fresh cilantro for garnish (optional)
